sali_DZ merci pour toutes ces recettes c'est vraiment bien je voulais savoir comment on prépare le pain libanais et syrien leurs pain n'ai pas comme le notre et je voudrais connaitre la recette de la tamia egyptienne et aussi comment on prépare la doubara de biskra elle est vraiment bonne et aussi el harissa el heloua Algeroise .??

 

et charab tamar el hyndi c'est comme le thé on l'appel comme ça a damas c'est aussi très bon je voudrais connaitre la recette comment LE préparer on le trouve bcp coté damas et au liban .??

Salut les filles voila pour le pain libanais, j'ai trouvé cette recette sur le net, j'éspére que ça réussira !

 

المقادير:

 

الكميه تكفي لصنع 8 ارغفه

درجة حرارة الفرن 260 درجه

مدة الخبز لكل رغيف 5 دقائق

 

المقادير:

6 فناجين من الدقيق العادي

ملعقتان من الحميره الجافه الفعاله

فنجانان من الماء الدافئ

ملعقة صغيرة من السكر

ملعقه ونصف صغيرة من الملح

 

 

الطريقة:

 

حلي الخميرة في ربع فنجان من الماء الدافئ واتركيه حتى ينتفخ

انخلي الدقيق وخذي فنجانان منه واتركيه جانبا

اخلطي الخميره المنتفخه مع بقية الماء والسكر والملح وصبيه في وسط الدقيق وحركيه مع قليل من الدقيق ليصبح السائل كثيفا ( يمكن الاستعانه بالخفاقه الكهربائيه) غطي الوعاء بقطهة قماش او نايلون واتركيه في مكان دافئ حتى تظهر الفقاقيع على سطحه

بعد ذلك اعجني الخليط واضيفي من الطحين الذي وضعتيه جانبا تدريجيا اثناء العجن حتى تصبح العجينه ملساء ولا تلتسق بالاصابع ليس من الضروري استعمال كميه العجين كلها

اجعلي العجينه على شكل كره واتركيها في

الوعاء مع تغطيته بالنايلون لمدة ساعة ونصف تقريبا تصبح العجينه ضعف حجمها

خذي العجينه من الوعاء واجنيها على رف رخامي مرشوش بالطحين

ثم قسميها الى ثماني اقسام متساويه واجعليها على شكل كرات

رقي كل قطعة عجين الى قرص بمقياس 52 سم واتركيه جانبا على اللوح مرشوش بالطحين وغطيه لمدة 20 دقيقه

اجعلي صنية الفرن على الرف السفلي حمي الفرن الى الى 260 درجه

ضعي قرصا من العجين على لوح خشبي مرشوش بالدقيق هزيها لتتأكدي بانها ستنزلق بسهوله وازلقيه على صينيه الفرن الحاميه واتركيها بالفرن لمده 5 دقائق ستريها تنتفخ

امامك كالبالون

اذا كنت تريدينه محمرا على الوجه الثاني اقلبيه بسرعه وحمريه لمدة دقيقه واحدة

برديه قليلا ثم احفظيه في النايلون حتى يبقى طري

voilà chose promise , chose due, (la recette vient directement de khalti car ma mère l'a égarée ... )

voila ,la recette:

 

Ingredients:

1\2 kg de foul (les fèves) dur madchouch c'est à dire sans la peau.

1 gros oignon ou bien 3 petits,6 gousses d'ail,beaucoup de persil (2 rabta)et de dabcha (2 rabta) (debcha à la constantinoise, à Alger ils disent hchich mkatfa ou un truc de genre)1 pincee de bicarbonate,sel ,poivre ,cumin et tabel (épice ou ras el hanout) et harissa.

 

préparation:

Tremper les fouls netoyés pdt 12h.Ensuite couper grossierement les oignons ,l'ail et les herbes.Après mixer les fèves lavès et les oignons l'ail et les herbes et toutes les epices sauf le bicarbonate .Ajouter 1 boule de mie de pain(de la taille d'une boule de ping-pong) mouillée et 1 oeuf,et remixer encore 1 fois,tu obtiendras 1 pate assez épaisse.Tu pourras conserver cette pate au congelateur,mais avant de la frire mets 1 pincee de bicarbonate avant 10mn.

 

Chauffer l'huile fumante,former des petites galettes et leur mettre tres peu de djeljlania et les les frire .surveiller ,ne pas laisser trop brunir.En les retirant les égouter de leur huile.
