[desserts-gâteaux ] baba au jus de citron

c une re7 très facile a réalisé et très bonne j'ai essayé goutté et adopté (^_^)

Ingrédients

 

• 250 g de farine
  
• 5 g de sel
  
• 3 oeufs
  
• 45g de sucre
  
• 1 c a soupe de levure seche
  
• 1 verre d'eau
  
• 75 g de beurre fondu
  
• Pour le sirop
  
• 1/2 litre d'eau
  
• 220 g de sucre
  
• 1/2 verre de citron
  
• 120 g de marmelade d'abricots (facultatif)
  
• Pour la chantilly:
  
• 30 cl de crème fraîche liquide fleurette bien froide
  
• un peu de sucre glace
  

Dans un saladier, mettez 75 g de farine prélevé sur les 250 g prévus, creusez une fontaine et déposez-y la levure délayée dans 1/2 verre d'eau tiède.

Faites une boule souple en mélangeant bien.

Recouvrez du reste de farine.

Laissez 30 minutes en attente dans un endroit tiède.

Ajoutez alors le sucre, le sel, les oeufs.

Travaillez à la spatule en bois pour obtenir une pâte mol,

Laissez reposer 15 minutes sous un torchon et rajoutez ensuite le beurre fondu froid

Mélangez bien jusqu'à une parfaite homogénéité.

Mettez dans un moule à savarin beurré (ou des petits moule en couronne).

Laissez lever jusqu'aux bords du moule.

Mettez à cuire à four chaud thermostat 7 (190-200°C) pendant 20 minutes sans ouvrir la porte du four surtout.

Surveillez la couleur, il doit être doré.

Sortez le gâteau du four et laissez reposer avant de démouler sur le plat de service.

Pendant ce temps, préparez le sirop en faisant bouillir le sucre avec l'eau pendant quelques minutes.

Hors du feu, et quand le mélange a tiédi, rajoutez citron et mélangez.

Goûtez si le dosage vous convient.

Lorsque le baba et le sirop sont tièdes, arrosez le baba largement à la louche et recommencez jusqu'à ce qu'il ait tout absorbé.

Nappez alors au pinceau avec la marmelade d'abricots allongée d'une cuillerée à soupe d'eau et chauffée (facultatif).

Montez la crème bien froide en chantilly ferme en y incorporant le sucre glace et garnissez-en le baba.

Réservez au frais.
